Anxi Tieguanyin Tea Introduction

Anxi Tieguanyin is a famous historical tea, a treasure among oolong teas, and one of the top ten famous teas in China. It has the characteristics of the sweetness of black tea and the fragrance of green tea. It has gradually become popular and famous in the world for its characteristics of lingering fragrance after seven brews, fragrant mouth after drinking, sweet and mellow taste, and endless aftertaste.

Anxi Tieguanyin Tea History

Anxi Tieguanyin was created between 1723 and 1736. After the founding of New China, Anxi Tieguanyin won the national gold medal in each national famous tea quality competition. In 1984, Anxi County was awarded the title of “Hometown of Chinese Oolong Tea” by the Ministry of Agriculture and the Chinese Society of Agronomy.

Spring tea is generally harvested from the end of April to the beginning of May, summer tea is harvested in late June, summer tea is harvested in early August, and autumn tea is harvested in early October. When the new shoots form buds, 2 to 4 leaves of tender shoots are harvested (3 leaves of buds are the best), commonly known as “open face harvesting”. “Open face harvesting” is divided into small open face, medium open face, and large open face according to the different elongation of the new shoots. The medium open face tender shoots are most beneficial to the formation of Tieguanyin quality. After the fresh leaves are picked, they are made through the processes of cooling, sun drying, air drying, making green, frying green, rolling, primary roasting, re-roasting, re-wrapping and rolling, slow roasting, picking and winnowing.

The most authentic Anxi Tieguanyin is produced in Yaoyang Village, Xiping Town, and is divided into several grades: Guanyin King, first grade, second grade, and third grade. Common brands include “Bama”, “Huaxiangyuan”, “Fengshan”, etc.

Anxi Tieguanyin Tea Quality Identification

◎Observe the color: Check whether the color of the dry tea is fresh. The color of spring tea should be dark green, preferably with sandy green and white frost; the color of winter tea should be emerald green. If the color is gray and withered, it is inferior. Also pay attention to whether there is a red edge. The red edge indicates that the fermentation is moderate. ◎Smell the aroma: Put your nose close to the dry tea and take three breaths. If the aroma lasts or even gets stronger, it means the quality is good; if the aroma is insufficient, it means the quality is inferior; and if there is a green smell or mixed taste, the quality is the worst. ◎Weight: If you weigh good tea in your hand, you will feel that it has weight. If it is too heavy, the taste will be bitter, and if it is too light, the taste will be bland. ◎Observe the color: After brewing, the soup color of good quality tea is bright and thick. Depending on the variety and preparation method, it can be light yellow, honey yellow or golden yellow. If the soup color is turbid or light, it means the quality is inferior.

Anxi Tieguanyin Tea Brewing Method

Tieguanyin tea can be brewed in a ceramic covered bowl. Take an appropriate amount of tea leaves and place them in the covered bowl. Pour in 100℃ boiling water. Use the bowl cover to scrape off the foam on the tea soup and pour it out quickly. Then use boiling water to brew it. Usually, cover the bowl cover and soak it for 15 seconds before you can savor the “Guanyin charm” of Tieguanyin.
