Spring tea is picked around Qingming Festival, usually between 2 and 5 pm on sunny days, and usually one bud and two leaves or one bud and three leaves are picked. Fenghuang Dancong Tea Brewing Method
Most of the Fenghuang Dancong teas are highly fragrant and are best brewed in a covered bowl. Take about 10 grams of dry tea and brew with 100℃ boiling water. Use the lid to scrape off the floating foam. The first brew is for washing the tea, not drinking it. Pour it out immediately after adding water. The second brew is for 20 seconds, the third brew is for 30 seconds, and the rest is up to you. Because Fenghuang Dancong tea leaves have thick veins, they are extremely resistant to brewing. If you brew Gongfu tea, you can brew it for 45 to 50 times.
