Zhejiang Longjing Tea Introduction
In November 2001, the state approved the expansion of Longjing tea production areas into three major areas: Xihu District, Qiantang District, and Yuezhou (Shaoxing) District. The tea produced in the 168 square kilometers of the Xihu production area (nearly 20,000 mu of tea gardens) is called Xihu Longjing, while the tea produced in the other two areas is commonly known as Zhejiang Longjing.

Zhejiang Longjing Tea Production Process
The production process is similar to that of West Lake Longjing, which is divided into steps such as spreading, killing green, cooling, stir-frying, and drying. The stir-frying process includes grasping, shaking, smearing, placing, pressing, buckling, and pressing.
Zhejiang Longjing Tea Quality Identification
◎ Look at the dry tea: West Lake Longjing has plump buds and the dry tea is yellowish; while Zhejiang Longjing has slightly “thin” buds and the dry tea is green. ◎ Smell the aroma: West Lake Longjing has a tender fragrance, while Zhejiang Longjing has a bit of machine-fried pyrotechnic flavor. ◎ Taste: West Lake Longjing tastes sweet, fresh and mellow, with a very obvious aftertaste, while Zhejiang Longjing tastes a bit astringent.

Therefore, the word “Kang” in Xikang was taken from the name, and the shape of the tea leaves resembles a brick, so it is named Kangzhuan Tea.
