Duyun Maojian Tea Production Process

Generally, it is harvested around Qingming Festival and ends around Grain Rain. This is consistent with the description in the “Draft of Duyun County Chronicles” that “it can be harvested from Qingming Festival to the Beginning of Autumn. The tea harvested before Grain Rain is called pre-rain tea, which is the best, and the finest is called Maojian tea.” The picking standard is fresh leaves with one bud and one leaf that are just beginning to unfold, and the length does not exceed 2 cm. Usually, 53,000 to 56,000 buds are required to fry 500 grams of high-quality Duyun Maojian. After the fresh leaves are picked, they are made through five processes: spreading, killing green, rolling, rolling and drying. Duyun Maojian tea is made in one go by a pair of skilled hands frying in a pot.
