Yuexi Cuilan has very strict requirements for fresh leaves, requiring “three musts, three nots, and five nots”, that is, the same level of fresh leaves must be uniform in size, consistent in age and tenderness, and the same in strength and thinness; no old leaves, old stems, or single leaves; no diseased leaves, rain leaves, fish leaves, purple bud leaves, or double leaves. After the fresh leaves are picked, they are refined through multiple processes such as picking, spreading, killing (separate pots and second pots), shaping, initial spreading, rough fire, repeated spreading, and full fire.
