Zhengshan Xiaozhong Tea Introduction

Zhengshan Xiaozhong is an ancient black tea, which is deeply loved by consumers at home and abroad for its unique pine fragrance. Its original place of origin is Tongmu Village, Xingcun Town, Wuyishan City, so it is also called “Tongmuguan Xiaozhong”. Later, because there were many fake Xiaozhong black teas circulating on the market, the locals named it “Zhengshan” to distinguish the counterfeits, which means authentic.

Zhengshan Xiaozhong belongs to Xiaozhong black tea. Xiaozhong black tea officially evolved from Wuyi rock tea to black tea around the reign of Emperor Daoguang and Emperor Xianfeng of the Qing Dynasty, and has a history of more than 150 years. According to historical records, in the mid-17th century, Portuguese Princess Catherine married the British royal family with Zhengshan Xiaozhong from China, and drank a cup of Zhengshan Xiaozhong every day after getting up. To this day, this black tea is still loved by the British royal family.

Zhengshan Xiaozhong Tea Production Process

Zhengshan Xiaozhong is mainly produced in high-altitude mountainous areas. The tea tree varieties cannot withstand low temperatures and long-term frost, and the tea trees sprout late, so the harvesting period is usually after the beginning of summer. The picking of fresh leaves requires that the newly sprouted buds reach a certain degree of maturity, and the top buds are picked (the top buds form stationary buds), and the second or third leaves are the best. After picking, it goes through withering, rolling, fermentation, pan frying, re-rolling, fumigation, screening, sorting, re-baking and even piling. Among them, the more important fumigation is to let the tea absorb the smoky flavor of pine wood and form a unique pine smoke fragrance.

Zhengshan Xiaozhong Tea Brewing Method

Before brewing, you should scald the teapot, teacup and other utensils with hot water. Then use 90-100℃ water to brew. Generally, 3 grams of Lapsang Souchong is mixed with 150 ml of water, and the tea will be brewed in 2-3 minutes. High-grade Lapsang Souchong can brew in about 30 seconds. The brewing time should be controlled well. If it is too long, it will taste bitter, and if it is too short, the tea will not be sweet.
