The picking of Junshan Yinzhen is very strict. The best time to pick is 3 days before and 10 days after Qingming Festival. The picking standard is the buds. The buds are required to be 25 to 30 mm long, 3 to 4 mm wide, and the bud pedicle is about 2 mm long. The buds contain 3 to 4 plump, differentiated but unopened leaves. The “nine no-picking” rules are required, that is, no picking on rainy days, no picking on dew, no picking on purple buds, no picking on hollow buds, no picking on open buds, no picking on wind-damaged buds, no picking on insect-damaged buds, no picking on thin buds, and no picking on buds that are too long or too short. The production of Junshan Yinzhen is complex and delicate. It has to go through the processes of killing green, cooling, initial baking, initial fermentation, re-baking, cooling again, re-fermentation, drying, and selection. It takes about 78 hours to make it.

Junshan Yinzhen Tea Brewing Method

It is best to brew Junshan Yinzhen in a transparent glass cup to facilitate observation of the tea leaves. Preheat the cup with boiling water, clean the tea set, and dry the cup. Then put about 3 grams of tea in it and pour 150 ml of boiling water in twice. Pour 1/3 of the water in the first time. The water temperature should be above 95℃. Shake well to make the hot water in the cup fully soak the tea leaves. Then pour the remaining water and cover the cup. After about 5 minutes, you can open the cup lid and smell the tea.
