Picking of Tanyang Gongfu tea begins in early April every year, with the standard of one bud and two leaves or one bud and three leaves. First, the fresh leaves are allowed to evaporate some of their water, and then they go through several processes such as withering, rolling, fermentation, and drying. In the production process, in order to ensure the quality of tea, it is important to pay attention to the use of graded fresh leaves, moderate fermentation, fast and uniform baking at high temperature, appropriate withering and rolling, and thoroughness, so as to achieve a high taste and strong aroma.

It is the best in color, aroma and taste. ◎ Gongfu tea produced in the high mountain tea area of the northwest (including Fu’an, Shouning, and Zhouning) has a clear aroma, a rich taste, and relatively fat leaves, which are more resistant to brewing; while Gongfu tea produced in the hilly tea area of the southeast coast (Xiapu area) has beautiful leaves, golden hairs, a fresh taste, and a bright red leaf bottom.

Tanyang Gongfu Tea Brewing Method

If it is high-end Tanyang Gongfu black tea, you can use white porcelain tea sets to brew it, which is convenient for observing the tea color. Before brewing, you should heat the cups and pots to avoid pouring hot water into cold teapots and cups, which is not conducive to the volatilization of the tea fragrance. The ratio of tea to water is 1:40 to 1:60 (usually 3 grams of tea with 150 ml of water), the water temperature is about 90℃, and the brewing time is about 3 minutes.
