Keemun Black Tea Production Process

The picking standards for fresh leaves of Qimen black tea are relatively strict. Special-grade tea is mainly one bud and one leaf. Different grades of tea are divided into one bud and two leaves, three leaves and pairs of leaves of different tenderness. The proportion of one bud and two leaves in different grades of tea is different. It is required to pick in batches, 6 to 7 batches of spring tea, 6 batches of summer tea, and less or no picking of autumn tea. Qimen black tea belongs to Gongfu black tea. The production process is complex and highly technical. It is divided into two stages: primary processing and refining. The primary processing is mainly based on the four processes of withering, rolling, fermentation and drying. After drying, it must be refined before it can become a commodity for export. The main refining processes include rough screening, cutting, air selection, picking, adding fire, piling and coloring, and packaging.
