Jinjunmei Tea Introduction
Jin Jun Mei is the top variety of Lapsang Souchong tea. Jin means grade; Jun means steep, which indicates that the tea tree grows in the mountains and hopes that it can be promoted like a galloping horse; Mei means appearance, which means that Jin Jun Mei looks like eyebrows. Jin Jun Mei is made by following some traditional production methods of Lapsang Souchong.
Jinjunmei Tea History
Jin Jun Mei was first created in 2005 by Zhengshan Tea Industry in Wuyishan, Fujian. The extremely high requirements on the production process make it extremely precious. The market price of one catty (500 grams) rose from 3,600 yuan to more than 10,000 yuan in 2012, creating a miracle of the rise of a new tea product from scratch.

Jinjunmei Tea Production Process
Before Qingming Festival, tea buds are picked from the original wild tea trees in Wuyi Mountain, mainly the bud tips. Every 500 grams of Jin Jun Mei requires about 60,000 to 80,000 bud tips. After picking, the bud tips are classified and managed according to the freshness of the buds and leaves, and the “three nos” are achieved: no heat, no redness, and no damage. Then, after withering, rolling, fermentation, drying and other processes, the tea leaves are processed in the primary process. In terms of the production process, the difference from the traditional Zhengshan Xiaozhong process is that except for a small part of the smoke during the withering process, there is no process of smoking with pine branches.

At present, the “Jin Jun Mei” trademark has been registered as a natural trademark. Enterprises can only use the “Jin Jun Mei” trademark after submitting an application and obtaining authorization. Therefore, if consumers buy Jin Jun Mei through formal channels, the quality should be guaranteed. The main brands are “Jun De” and “Zheng Shan Tang”.
Jinjunmei Tea Quality Identification
◎ The top-grade Jin Jun Mei has tight and elegant tea leaves, which are luxuriant, heavy and solid, with golden yellow in the black; the tea soup is orange-red, clear with golden rings, and has a lasting mountain flavor; the leaves are bronze; the inferior ones have red, turbid and dark tea soup, and the leaves are reddish brown. ◎ The authentic Jin Jun Mei smells like honey, the tea soup has a long and sweet fragrance, mixed with the flavor of flowers and fruits, and the taste is sweet and smooth. ◎ The top-grade Jin Jun Mei can generally be brewed 12 times in a row, and the taste is still full and sweet, and the aroma is still there. If it is a substandard product, the fragrance will disappear after brewing a few times.
Jinjunmei Tea Brewing Method
For tea brewing, it is advisable to choose porcelain covered bowls or purple clay teapots. As the buds and leaves are relatively tender, the water temperature should be kept at around 90℃ during the brewing process. The first brew is to moisten the tea, which is poured immediately after brewing. The second brew takes about 10 seconds to brew the tea; the subsequent brews take slightly longer time. Generally, after brewing about ten times, the taste is still sweet.
