Alishan Zhulu Tea Production Process

The picking time and number of times are related to the altitude. Generally, there are 4 to 5 pickings, namely spring tea, summer tea, autumn tea and winter tea. The picking standard is tender buds with one bud and two leaves. The roasting method of Alishan Zhulu Tea is unique. It is almost entirely handmade. The picked fresh leaves must be fermented and greened in time, then rolled, initially baked, and wrapped. The whole process cannot be interrupted. It takes about 2 days and 1 night to form raw tea, and then it can be made into tea after re-baking and other refining processes.

Alishan Zhulu Tea Brewing Method

It is best to brew Alishan Pearl Dew Tea in a purple clay teapot. White porcelain cups can be used. Before brewing tea, warm the teapot and cup with boiling water, then put in an appropriate amount of tea leaves and brew with 95℃ boiling water. It is best to boil the water until the edge is like a fountain, that is, “two boils” is the best. The first brew should be poured evenly on the tea leaves. The amount of water should not be too much, just let the tea leaves heat up. Pour it out immediately after pouring, so that the tightly bound dry tea leaves can open up, and the tea soup tastes better. Start drinking from the second brew, the brewing time is 1 to 2 minutes, and then reduce it accordingly.
