Dongding Oolong Tea Introduction
Dongding Oolong Tea, commonly known as Dongding Tea, is a famous semi-fermented Baozhong tea in Taiwan, named after the Dongding Mountain where it is produced. The Qingxin Oolong tea trees on Dongding Mountain are the main raw material of Dongding Oolong. The annual average temperature of the production area is 22℃, with abundant water, lush vegetation, and clouds all year round, which is very suitable for the growth of tea trees. However, due to the steep mountains and forests, it is not easy to pick, so the output is limited and it is particularly precious.

Dongding Oolong tea has a long history of production. Its origin Dongding Mountain is a famous historical tea area in Taiwan. Initially, it was not called “Dongding Oolong Tea”, but was generally called “Taiwan Oolong”. In the 1950s, the production method of Anxi in Fujian was imitated, and the quality of spherical Dongding tea gradually improved, and its reputation increased greatly. People gradually called it “Dongding Oolong”, and its popularity even surpassed Wenshan tea.

Dongding Oolong Tea Production Process
Tea can be picked in all seasons. Spring tea is picked from late March to late May, summer tea is picked from late May to late August, autumn tea is picked from late August to late September, and winter tea is picked from mid-October to late November. Spring tea and winter tea are the most prominent, and the picking standard is one bud and two leaves or one bud and three leaves. After the fresh leaves are picked, they are withered, made into green, withered, rolled, first baked, repeatedly rolled (wrapped), baked, and roasted. In this process, making green is a very critical link, and there will be slight fermentation during the process.

At present, Dongding Oolong has applied for the “Dongding Oolong Tea” origin certification mark. When purchasing, you must recognize the anti-counterfeiting mark to avoid buying counterfeit products. You can refer to the “Xinji” brand. Generally, winter tea is the best, followed by spring tea.
Dongding Oolong Tea Quality Identification
◎ Top-grade Dongding Oolong is different from the spherical Tieguanyin, but is hemispherical, and the tighter the better, the drier the tea stems and tea leaves, the better, the color is bright dark green (the color is darker, greener and more oily than Tieguanyin), with grayish white spots, and the dry tea has a strong aroma. ◎ After brewing, the soup color of top-grade Dongding Oolong is honey yellow, clear and bright, with a light bottom, a refreshing fragrance that is not greasy, like a flower fragrance, a rich and sweet taste, a strong mountain flavor, soft and bright leaves, and a light green middle part of the leaves.
Dongding Oolong Tea Brewing Method
Pottery and porcelain are the best vessels for brewing Dongding Oolong, followed by glassware. Purified water is the best. Warm the pot before adding tea, with the amount of tea leaves reaching about 1/3 of the vessel. Then pour in boiling water. The first brew should be quick to rinse the tea and serve. The second brew can be served after half a minute, and the serving time can be extended successively thereafter.
