The tea is harvested in mid-May and can be harvested 4 times a year, with the highest yield in summer and autumn. When picking tea, you must choose a sunny day, and when the new shoots grow into buds and the top leaves open in the middle, pick two or three leaves, commonly known as “open-face picking”. After the fresh leaves are picked, they are dried, made green, fried and kneaded, roasted, winnowed and selected, spread to cool, picked and sorted, roasted again, stewed, raw tea, winnowed and selected again, and re-fired.
