The leaves are picked between Qingming and Guyu, and the picking standard is fresh leaves with one bud and one leaf or one bud and two leaves just beginning to unfold. Diseased leaves, rainwater leaves, purple bud leaves, damaged leaves, etc. are not picked. After the fresh leaves are picked, they are made through the processes of spreading, killing green leaves, rolling, sorting, baking, picking, and fragrance extraction. Killing green leaves is the most critical. Killing green leaves must be done in a flat pan, and all are done manually. When the water in the pan evaporates, use a fan to air dry it, and then start rolling and twisting.
