Anji White Tea Introduction
Anji White Tea is a newly created famous tea, produced in Anji County, the first ecological county in China. Anji White Tea is high in amino acids and low in tea polyphenols (the total amount of amino acids can reach more than 6%, about twice as high as that of ordinary green tea). It is a rare flower among the national teas. Because the leaves are jade white and shaped like phoenix feathers, it is also called Jade Phoenix Tea.
Anji White Tea History
Anji White Tea was created in the 1990s. In 2004, it was named one of the “Top Ten Famous Teas in Zhejiang Province”. In 2007, it was named a “Famous Chinese Agricultural Product” by the Ministry of Agriculture. In 2008, it was named a “Well-known Chinese Trademark” by the State Administration for Industry and Commerce, becoming the first agricultural product in Zhejiang Province to be administratively recognized as a well-known Chinese trademark. It has also been internationally registered in 33 countries and regions.

Anji White Tea Production Process
The picking period is from mid-April to mid-May. The picking standard is one bud and one leaf, with uniform size of fresh leaves. The picked young buds and leaves are made through the processes of moderate spreading, killing green, cooling, primary drying, and secondary drying.

Anji White Tea Quality Identification
◎ Color identification: Authentic Anji white tea has a fresh green color with golden edges; tea with a dark and uneven color is suspected to be from other places and tea not made from the “White Leaf No. 1” variety. ◎ Smell: Anji white tea has a lasting fragrance and a hint of orchid; low-end products have a high-fire flavor and a grassy smell; tea with a stale taste is old tea. ◎ Taste: Anji white tea is a high-amino acid product with a fresh taste, sweet aftertaste, and no bitterness; tea with a bitter, burnt, or grassy taste is inferior or counterfeit. ◎ Shape: Due to the strict picking of Anji white tea, the buds and leaves of the finished tea are uniform, with exposed buds and peaks, resembling phoenix feathers; while the strips of foreign white tea are relatively tight and thin, with no obvious buds.
Anji White Tea Brewing Method
Anji white tea is best brewed in a transparent glass cup with water temperature around 85°C. It can be drunk after brewing for about 2 minutes.
